
Yum! Last night was a late night home, so I was looking for something speedy for dinner. Pesto Pizza with Tofu Ricotta and Julie Hasson’s (previously made) Italian Sausage with mushrooms and onions. I bought the crust at a local pizzeria here in town that makes it fresh every day – tasty! Pop that bad boy in the oven and 10 minutes later, dinner is served!
I made the pesto from pine nuts, basil, garlic (surprise~!) and a little olive oil. The tofu ricotta was firm tofu, miso, tahini and nutritional yeast. This is a great dinner when you need something fast, but still want something that taste’s great!







That looks amazing! I once tried making pizza with dough from Whole Foods, it only turned out ok.

That pizza looks awesome! I wish we had a place near by to buy crusts from. Brett is the ‘dough person’ in our house, and he’s still working to perfect his recipe, so we’re mostly relegated to Amy’s Roasted Vegetable pizza. I want yours!

My homemade crust is never as good (or as fast) as the pizzeria =) It really lets you have pizza whenever you want without planning ahead.
