Today is the last day of Munchkins school before we move cross country (I am going back to school for my PhD), so no goodbye is complete without plate’s o’ cupcakes! The munchkin insisted on three variations of the Cookies n’ Cream Cupcakes from my favorite cupcake cookbook – Vegan Cupcakes Take Over The World, so we made Vanilla, Chocolate & Peanut Butter. The vanilla & chocolate were frosted with fluffy buttercream with vanilla or chocolate cookie crumbles.

The peanut butter cupcakes had the peanut butter buttercream with peanut butter cookie crumbles (that’s a lot of peanut butter!) Some of them got chocolate ganache drizzle. All in all, they were pretty and she was super excited to distribute to her teachers, administrators and classmates.
