Dessert Trial and Error

The final production of the evening last night was a dessertish dish. I previously had a happy accident when some carrot cake cupcakes I was making were not as pretty as I had hoped, so I crumbled them on top of an apple cobbler base. The result was a terrific dessert! I tried to recreate this by pouring carrot cupcakes on top of an apple mixture, but without pre-cooking the cupcakes, it was not as good.

In this iteration, I transferred some of the ingredients to the bottom half with the apple and then tried to make a sweet crumbly topping. The result tasted good, but was not so much to look at. The topping also got slightly drier than I would have liked, probably because I didn’t use very much butter.

Carrot Cake Cobbler

Bottom Cobbler:

1 medium diced apple

1/2 cup diced carrot (sounds weird, but you can’t taste them)

1/4 cup diced raisins (I don’t like big chunks of raisins)

1/4 cup walnut pieces

1 Tbls turbinado sugar

1 Tbls whole wheat flour

1 tsp vanilla

1 tsp cinnamon

1/4 cup water

Topping:

2 Tbls room temperature vegan butter

3 Tbls whole wheat pastry flour

2 Tbls sugar

3 Tbls oatmeal

1 tsp cinnamon

1/8 tsp nutmeg

1: Preheat Oven to 350.

2: Combine the bottom half ingredients together and put in a baking dish.

3: Combine the toppings and sprinkle over the apple mixture.

4: Cook for 40-50 minutes until apples are soft.
