Apple Crisp Muffins

I was testing another Happy Herbivore recipe last night – the Apple Crisp Muffin. I tell you it was fan-freaking-tastic! That has to be one of the best muffins I’ve made (and gorged on) in a long time. I was so full, I almost couldn’t eat dinner (right – almost) Behold:

There’s really nothing else to say. Just looking at the picture makes me want to go eat another one. I finally gathered up the few that were remaining and took them to the office so other people could gorge on them.
