Mango Pineapple Salsa

Second on the Caribbean Taste Express was a Mango Pineapple Salsa. This was made with all fresh ingredients and was really tasty. I did not really measure, so everything listed is approximate and can be modified to suit any palate.

Mango Pineapple Salsa

1 diced mango

1 cup of diced pineapple

2 medium tomatoes diced

1 diced red pepper

2 T fresh lemon juice

Juice of 1 Key Lime

1 small red onion diced

Handful of minced jalapenos – adjust for your heat preference

a dash of sea salt

fresh cracked pepper to taste

Mix all together and enjoy! This only gets better as it sits in its own juices!!!

  1. OK seriously, I’m sorry to comment on almost everyone of your posts, but AWESOME. This looks really good and it’s one of those salsas you can make as spicy as you want. (!!!!!)
