Cinnamon Swirl Muffins

So this morning, I made Cinnamon Swirl Muffins from Fat Free Vegan. They were really tasty, but a little dry (my fault – I modified the recipe slightly and over stirred.) Here is what I did:

Cinnamon Swirl Muffins

1/2 cup unbleached flour
1/2 cup whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/4tsp salt
dash of nutmeg
1/4 tsp cinnamon
1 egg replacer
1/4cup soy yogurt
1/3 cup grapefruit juice
1/4 cup soy milk
1/2 tsp vanilla extract
1/4 cup sugar

350 F
Mix dry into wet.

Fill muffin cups.

Sprinkle sugar/cinnamon on top & swirl into batter.

Bake for 17-22 minutes.

The flavor was scrumptious! I will definitely try these again. I was told they worked really well (even dry) with coffee.
