Desserts

A trio of goodness appeared for dessert consumption: Strawberry and Mango Cobbler, Mojito Cupcakes and Banana Split (sort of.)

I found the Strawberry and Mango Cobbler recipe from SaraJane here. It was good, but I made it in a single serve dish, so there was not enough fruit for the amount of topping. This made it a little dry. I would use a deeper pan next time so I could fit more mango and strawberries inside =)

Next up was a test recipe from Happy Herbivore – Mojito Cupcakes. These were really good and a refreshing summertime dessert!

This trio of dessert was completed with munchkin’s version of a banana split. We are not big chocolate fans, so we had banana, vanilla ice cream and caramel sauce. Yummy!
