Raw Veggie Pita

I have been eating raw and just had to have a few carbohydrates as I haven’t had a chance to sprout any beans or seeds and make my own bread or crackers. I cooked up a pizza crust completely plain and it puffed up into a beautiful pita. I diced tomatoes, green pepper, mushroom and onion. I also made a delicious pesto with basil, arugula, pine nuts, walnuts, garlic and oil which I smeared on the bottom of the pita. I topped with a walnut, miso and nutritional yeast parmesan substitute. This was FANTASTIC@@@!!!!!!

Yummmmmmmmm! I sectioned several fresh tomatoes on a plate. I topped with diced onion and fresh oregano. I drizzled celtic sea salt, cracked black pepper, virgin olive oil and balsamic vinegar over the top and then tucked in!

As part of the raw experimentation, I have started a few mung beans and wheat berries along the path to sprouting. I have soaked them both overnight, and then drained the water and let them sit. I rinse them every 12 hours and return them to sitting. They are both sprouting nicely and I should have pics to share soon. COOL! I think I am going to try making some crackers on the dehydrator and possibly some rice paper spring rolls.
