This was a far-out creation from Brendan Brazier – Spicy Black-Eyed Pea Pizza with Sweet Pepper Pesto, grated Beets, Sweet Potatoes and diced onion with vegan parm… It was unusual. Not bad, just different.
First up was the spicy black-eyed pea crust which was made in the food processor. The sweet pepper pesto also came from the processor and was so pretty I took a picture before I mixed it.
All in all, it looked pretty and was very healthy, but was slightly unusual.
I paired it up with a salad of baby spinach, dried cranberries and a Cayenne, Dill, Tahini Vinaigrette. YUM!
