This was a far-out creation from Brendan Brazier – Spicy Black-Eyed Pea Pizza with Sweet Pepper Pesto, grated Beets, Sweet Potatoes and diced onion with vegan parm… It was unusual. Not bad, just different.

First up was the spicy black-eyed pea crust which was made in the food processor. The sweet pepper pesto also came from the processor and was so pretty I took a picture before I mixed it.

All in all, it looked pretty and was very healthy, but was slightly unusual.

I paired it up with a salad of baby spinach, dried cranberries and a Cayenne, Dill, Tahini Vinaigrette. YUM!

  1. That pizza indeed sounds interesting, but tasty too!

  2. ohhhhhhhhhhhh! the pizza looks so unique! and the tahini vinaigrette just looks amazing with the spinach & cranberries! it’s so pretty! and i bet it tastes just as awesome as it looks!

  3. Thanks! The salad was fantastic! I LOVED the dressing. The pizza was interesting. I’ll have to fiddle around a little with the crust because it wasn’t as crusty as I would have preferred =) I really liked the idea of using black eyed peas in it though.
