Chickpea Tacos

The final component of the delicious dinner was Chickpea Tacos from Happy Herbivore. The spice mix was so pretty I had to take a picture!

These were outstanding. This was my first taco stuffing made with chickpeas, but it certainly won’t be my last. It was all I could do to take a pretty picture before I dug into these! These were a definite winner, and I will be making them again soon! I think the only thing I changed (and you will be surprised to hear this admission) is that I added fresh garlic to the recipe =)

I guess I should ‘fess up the story of my garlic beginnings. One Thanksgiving many years ago, I was making dinner. I had selected a number of dishes from online that looked tasty, including roasted garlic mashed potatoes. This particular potato recipe called for 10-12 cloves of garlic. I had not been cooking very long, and I know you won’t judge me (much.) I thought a clove was the whole head =) I can hear it now – GASP ! NOOOOOO – But yes – that’s right!!!! I made mashed potatoes with 12 HEADS OF GARLIC!@!!>@@!!!! I guess it seems obvious that these were the garlicky mashed potatoes anyone has ever made ( and it took me 3 hours to shuck it all.) While this is an amusing anecdote of the early cooking naivete, they were not bad. The roasting really mellowed all the garlic so it didn’t appear to contain 12 entire heads of garlic. It is now a running joke in the family about the garlic content of every meal I prepare, which I take with relative good humor (as it’s usually true….)

  5. I have been known to routinely add similar levels of garlicky good to my mashed potato… it is to die for with vegan sausages and green cabbage. Just add lots of parsley as well as maybe some garlic gravy 😉
